Bisquick Breakfast Casserole Recipe

We love to eat breakfast for dinner, but we actually ate this for breakfast. We had some overnight guests and served this for an easy breakfast. I mixed it all up the night before and refrigerated it overnight. I just popped it in the oven when I got up and breakfast was ready in no time! The casserole tasted great. It was really good with a little hot sauce on top. Next time I might mix in some green chiles or salsa in the egg mixture. Give this a try the next time you need an easy breakfast casserole.

What is Bisquick?

Bisquick is a pre-made baking mix sold by Betty Crocker. It is made with flour, shortening, salt, sugar, and baking powder.

If you don’t have access to a box of Bisquick, you can make a quick homemade Bisquick mix.

In a food processor pulse 1 cup of all-purpose flour, 1 1⁄2 teaspoons of baking powder, 1⁄2 teaspoon of salt, and 2 1⁄2 tablespoons Crisco shortening. If you don’t have a food processor, you can use a pastry cutter to cut the shortening into the flour mixture.

How to Make Hash Brown Breakfast Casserole

This casserole is easy to make with only a few simple ingredients. In a large skillet, cook sausage over medium heat until crumbled and no longer pink. Add hash browns to the skillet and cook until the potatoes are golden brown. Drain excess grease. Spoon sausage mixture into the bottom of a 9×13-inch baking dish that has been sprayed with non-stick cooking spray. Sprinkle shredded cheese over the casserole.

In a large bowl, whisk together eggs, Bisquick, milk, salt, and black pepper. Pour the Bisquick mixture over the sausage mixture. Cover the baking dish with aluminum foil and refrigerate for 8 hours. 

In the morning, remove the dish from the fridge. Preheat the oven and bake covered for 45 minutes. Remove the foil and bake for an additional 15 minutes, until the casserole is set. Let stand for 5 minutes before cutting into slices.

    • Don’t like sausage? You can substitute ham or bacon.

  • Store leftovers in an airtight container in the fridge.

Hash Brown Breakfast Casserole Recipe – an easy and delicious overnight breakfast casserole made with Bisquick! Great for overnight guests and a quick weekday breakfast.   • 1 lb pork sausage
  • 1 Tbsp dried minced onion flakes
  • cups frozen cubed hash browns
  • 5 large eggs
  • 2 cups shredded sharp cheddar cheese
  • cups milk
  • 1 cup Bisquick
  • ¼ tsp salt
  • ¼ tsp pepper
  • Cook sausage and onion in a large skillet over medium-high heat 5 minutes or until meat crumbles. Stir in hash browns, and cook 5 to 7 minutes or until sausage is no longer pink and potatoes are lightly browned. Drain mixture on paper towels; spoon into a greased 13- x 9-inch baking dish. Sprinkle with shredded cheese.

  • In a bowl, whisk together eggs, milk, Bisquick, salt, and pepper. Pour Bisquick mixture evenly over sausage mixture. Cover with aluminum foil and refrigerate for 8 hours.

  • Remove baking dish from refrigerator. Preheat oven to 350ºF.

  • Bake covered for 45 minutes. Uncover and bake 10 to 15 more minutes or until a wooden pick inserted in the center comes out clean. Remove from oven, and let stand 5 minutes.
