When you prep green beans, you want to make sure you’ve trimmed the ends to avoid any stringiness. My grandmother taught me the old-fashioned way of bending each end and breaking at the weak point. Then, you can pull the string along the back of the pod to remove it at the same time. This method makes sure you break at the right point and removes the string from top to bottom.

What is a blistered green bean, anyway? Well, for this side dish, we blister green beans by quickly tossing them in olive oil and balsamic vinegar over a hot skillet. This will brown the outside skin of the bean while keeping it firm and crisp. Blistering is a wonderful method that allows veggies to keep their delicious texture while getting even more crispy and warm. No more soggy green beans!

Toss Up These Blistered Green Beans

For such a simple recipe, this one is surprisingly flavorful.

Start by heating a cast-iron skillet over medium-high heat. Then, add the olive oil to the pan and allow it to heat up. I usually test this by running my fingers under the faucet, then flicking water onto the pan. If you hear a sizzle, it’s ready to go!

Add the green beans to the pan and toss them for about 1 minute, making sure all of the sides are getting evenly browned. Add the balsamic vinegar and toss for another 30 seconds (or for a minute, at most). Remove the green beans from the heat, top with your slivered almonds, and serve immediately.
